# Cooking Steps:
01 - Pat chicken cutlets dry with paper towels. Season both sides generously with salt and pepper. Lightly dredge each piece in flour, shaking off excess to ensure even coating.
02 - Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken in a single layer, cooking in batches if necessary to avoid overcrowding. Cook 3 to 4 minutes per side until golden brown and just cooked through. Transfer to a plate and tent loosely with foil to keep warm.
03 - Reduce heat to medium. Add remaining 2 tablespoons butter to the skillet. Add minced garlic and sauté for 30 seconds until fragrant but not browned. Pour in chicken broth, lemon juice, and zest, using a wooden spoon to scrape up browned bits from the bottom. Stir in Dijon mustard and capers if using. Simmer for 2 to 3 minutes until slightly reduced and thickened.
04 - Return chicken and any accumulated juices to the skillet, turning each piece to coat thoroughly in the sauce. Simmer gently for 2 minutes until heated through and sauce clings to the chicken.
05 - While chicken finishes, heat 1 tablespoon olive oil in a separate large skillet over medium heat. Add minced garlic and cook for 30 seconds until aromatic. Add spinach and a pinch of salt.
